Summer Mojitos


  • 6 wedges of lime (just over half a lime)
  • 8 fresh mint leaves
  • Small handful (6-8) raspberries (frozen will do)
  • ice
  • sugar syrup (either buy or make, 1 cup water boiled with 1 cup sugar)
  • 50ml (2 shots) Bacardi or white rum
  • 25ml (1 shot) Framboise (raspberry liquer)
  • Soda water

Get a large 'old fashioned' cocktail glass, place in lime wedges, raspberries, mint leaves and a good dash of sugar syrup (1-2 teaspoons). Squish together with a muddler or end of a rolling pin so juice comes out of limes. Add bacardi and framboise and top glass up with ice. Use a spoon to mix all ingredients so mint and lime are distributed through ice. Once mixed, top drink up with soda, garnish with lime, mint leaves and a straw. Print this post
